 And finally, as a "dessert", they offer a small bowl of rice topped with one of three types of egg yolk. I have only tasted the yuzu yolk as I am usually stuffed to the brim after eating the main course. They say that the chickens are fed yuzu in some sort of form, and that makes the yolk taste like yuzu. And it does! Absolutely fantastic.
